Some people love cilantro, like Feast Meets West hosts Ellen Chu and Andrew Ryan. Other people hate it, like intern Reece Ayers.
In today's Feast, we're going to combine cilantro with ice cream and ground peanuts in a delicious "ice cream burrito" (花生捲冰淇淋) that originated in the northeastern Taiwan county of Yilan.
TODAY’S MENU: In our first course, we begin with a key ingredient of our ice cream treats -- one of the most controversial ingredients in all of cooking: cilantro (or coriander)! In our second course, Reece joins Andrew in the test kitchen to try his hand at making the traditional wrappers and ice cream. And in our third course, we’ll be assembling and sampling this spring treat right here in the studio!
RECIPE for Wrappers
These wrappers can be used to create "runbing", "danbing", spring rolls, etc.
Ingredients: (half recipe in parentheses)
225g of water (225g)
½ tsp salt
150g of High-gluten flour (sifted)
Mix all of the ingredients together with a whisk. (You can use a food processor or mixer; the longer you mix, the chewier the wrappers).
Cover and let it sit for about 30 minutes.
Place a flat pan on the stove and turn on low heat.
Brush a thin, even layer of the mixture on the base of the pan.
Once the edges start to curl upward, flip it.
Once it is slightly transparent, it’s good to go!
Use two pans to speed up the process.
